6Ruby’s Roasted Marshmallow Brownies
These delicious delicious roasted marshmallow brownies are adapted from Andrea’s Rich Brownies recipe.
- 1 cup butter
- 4 squares UNSWEETENED chocolate
- 4 eggs
- 2 cups sugar
- 1 cup flour
- 2/3 cup chocolate chips
- 1 bag large marshmallows
Preheat oven to 375 F/190 C.
Grease two 8 inch x 8 inch/20 cm x 20 cm [amazon_link id=”B000MMK448″ target=”_blank” ]pans[/amazon_link]. Grease them well. Line them with parchment paper if you have it.
Put the chocolate and butter into a 4 cup glass microwave safe measuring cup. It will melt faster if you chop it up first. Heat at low power for 4 minutes or until melted. Stop the microwave now and then to stir the chocolate and butter. (You can also do your melting in a double boiler.)
Mix eggs and sugar. Use an electric mixer or a spoon.
Add the melted chocolate and butter. Beat well.
Using a wooden spoon, stir in the flour and chocolate chips. Stir until it is all mixed up well and you can’t see any flour.
Scrape the batter into the two prepared pans.
Bake at 375 F or 190 C for 25 minutes.
When the brownies are done, take them out of the oven.
Turn up the oven heat to broil.
Cover the top of the brownies with a layer of marshmallows.
Return pan with brownies to oven and broil for one to three minutes until marshmallows are brown. Check the oven often, don’t let your marshmallows burn!
Take the pan out of the oven.
Cool the brownies at room temperature for about 2 hours.
If you spray your knife with cooking spray before you cut the brownies, the marshmallows won’t stick to the knife as much.
